Hi,
I’m trying to add a signature but when I do all the options under the signature settings are greyed out.
What am I doing wrong?

The editor on the right stays greyed out until you’ve created and selected a signature in the list on the left — it’s not a permissions thing. Click the + button beneath the signature list in Preferences > Signatures, and the name field, template picker and information fields will light up for the new signature.
Once it exists, use the Default for: dropdown in the top-right of the editor to make it the default for one or more accounts, so it’s applied automatically to new messages and replies. There’s a walkthrough of the whole editor here: Create beautiful signatures — Mailspring Documentation
