Spellcheck and grammar check on macOS not working properly

Steps to reproduce the behavior:

Create or reply to a message

Type text with spelling or grammar error
Expected Behavior
Spellcheck and grammar check engages, highlights or auto-corrects errors.

- OS and Version: macOS 14.7.2 on an M2 Mac Mini
- Installation Method: Installer
- Mailspring Version: 1.23.0 (1.23.0)
Additional Context
The grammar check even says “no issues.” (See screenshot.)
Spell and grammar check are working at the OS-level on other apps (TextEdit, Notes, etc)
This has led to some rather embarrassing emails being sent. (“God morning”, “Ho Nancy”, etc.
